Colby's Experience
Colby started working in a restaurant when he was 15 years old. "There was always something fun about the pace of restaurants. Even when I tried to leave for other industries, it just kept beckoning me back. I love serving people good food!" Take a look at some of the events that he's organized over the years.
Corner Bakery Cafe
Colby's catering experience started as a General Manager at Corner Bakery in Salt Lake City. He managed over $1MM in sales for office lunches and private events for the University of Utah and companies like Myriad Genetics and Biofire.
Utah's Hogle Zoo Brew
Colby has always taken the opportunity to give back when he can. As part of that commitment, his Corner Bakery prepared and donated bites for over 3,000 people at the annual Zoo Brew fundraiser in Salt Lake City.
50 West Club & Events Center
Colby has also managed an events center that doubled as a latin club on Saturday nights. 50 West hosted everything from comedy shows and bands to wedding receptions, lunch and learns and private events for companies like Doterra and Broadway Media.
Real Salt Lake Meals
Colby and his team worked closely with the Real Salt Lake, Utah's soccer team, to provide regular post-practice and post-game meals for the players. This involved a lot of planning to meet the teams nutritional needs and ensure that they were able to properly refuel.
Freshii Catering Program
After moving to San Diego and joining up with a new franchise, Freshii, Colby created a breakfast and lunch catering program that fit the company's needs. He later took the reigns as the leader of this Freshii and catering sales and profitability grew steadily over the years.
91X's Wrex the Halls & San Diego Fire's Girls Empowerment Camp
At these charity events, Colby and his team setup a made-to-order rice bowl station and served 200-400 people. Setting up these events allowed Freshii to bring the restaurant off-site and give people the same experience that they had in the restaurant at the location of their choosing.
Freshii Catering Success
Freshii's catering menu was a hit. With customers like HG Fenton, San Diego Corporate Connection, IQHQ, Illumina, Team Elite Aquatics, Morgan Stanley, Genomatica, and Clickup. In 2019 and 2022 Colby and the team also served over 800 volunteers at San Diego Pride.
Noble Restaurant Company
Post-pandemic it became clear that having a store-front was interrupting Colby's true passion: Catering. As the Freshii door closed, the Noble Restaurant Co door opened. Noble is featured as the preferred caterer at San Diego's largest coastal property for Corporate and Special Occasions, Yard & Sea. Noble also continues to serve previous clients in San Diego that ordered from Colby at Freshii.
